- Preheat Oven to 200 degrees. Wash & Cut Potatoes, coat with oil, and spread evenly onto a baking tray. Season with Salt & Pepper.
- Qtr Tomato’s & Olives, and dice Red (Spanish) Onion
- Pick Oregano leaves. When Potatoes are cooked, smash them lightly with a fork.
- Place all ingredients into a large bowl and mix, using the liquid from the Marinated Fremantle Octopus jar as dressing.
- Serve warm or chilled.
