Summer brings increased recreational boating and fishing activities along the west coast and more people are discovering our ocean delicacies, including the Octopus.
The humble octopus has long been mysterious, thanks to its appearance, intelligence, habits and remarkable defence mechanisms, however this is all about to change if some of the world’s leading chefs have their way.
Different to the vulgaris octopus species found in the Mediterranean and Atlantic Ocean, our Western Australian octopus(O’tetricus) is considered to be the best eating octopus in the world because of the abundance of its favourite food being rock lobster, crabs, scallops and abalone.
Many of Australia’s and International chefs have added Fremantle Octopus to their menus, obtaining the raw, steamed or marinated octopus from our carefully selected distributors. Once caught the head is removed and then snap frozen into bulk 10kg cartons or 1kg hands. The octopus in frozen for at least 2 weeks, this is what tenderises our octopus.
